Spanish Omelette

Prep time: 30 mins
Cook time: 14 mins
Serves: 4

Ingredients:
1 potato, peeled and diced
1 large carrot, peeled and thinly sliced
1/2 red onion, finely diced
5 eggs
1/2 cup grated cheese
1/4 cup milk
1 tbsp freshly cup herbs (parsley, oregano, etc)
2 tbsp oilive oil

Method:
  1. Steam potato and carrots until soft. Set aside.
  2. Beat the eggs well with milk and a pinch of salt and pepper in a large bowl. Add the potatoes, carrots, onions, cheese and herbs and mix well.
  3. Add one tablespoon of olive oil to a frying pan. When oil is hot, add the vegetable and egg mixture and cook for 5-8 minutes or until the edges of the omelette are golden brown. Scrape a knife around the edges before turning the omelette over on to a plate.
  4. Return the pan to the heat and add another 1 tbsp oil, then slip the omelette back into the pan for a further 5-8 minutes or until golden brown.
This simple Spanish omelette is a quick and easy way to please the taste buds. Serve with a piece of toast.
