Finally started cooking again and I am really starting to enjoy it again.. for tonight's dish, I made my Creamy Bacon and Mushroom Pasta. Heres the recipe:
Preparation time: 10 minutes
Cooking time: 20 minutes
1 tablespoon oil
Few slices of rashers cut bacon, sliced
200g button mushrooms, sliced
250ml cream
1 big onion, sliced
spring onions, sliced
2 tablespoons grated parmesan cheese
freshly ground black pepper
400g penne, cooked, drained and kept warm
shaved parmesan for serving
- Heat the oil in a saucepan and saute the bacon and mushrooms for 4-5 minutes or until softened.
- Add the cream, onions, spring onions, cheese and pepper. Stir until smooth and simmer for 2-3 minutes.
- Toss through the pasta and simmer until heated through, top with parmesan.
- Serve immediately.
