Here's my recipe for Baked Potato Soup...
Ingredients
- half med head cauliflower
- 3 med size potatoes
- salt and pepper
- 4 cups chicken broth
- 2 slices crisp bacon
- 3 tbsp chopped chives
- 2 tbsp cheddar cheese
- 1/2 cup or more of light cream
- 2 tbsp butter
Directions
- Steam cauliflower and potatoes till tender
- Drain, place in baking dish, drizzle with olive oil and salt and pepper and broil till golden brown
- Heat a little oil and saute onions till soft but not brown
- Add cauliflower and potatoes, broth and simmer till very tender
- Puree half mixture in blender and return to pot
- Add cheese, bacon, cream and chives and stir till cheese melted
- Add butter, stir till melted and serve.
